Bison Bar Recovery Pancakes

Ingredients

  • 1 Genesee Cinnamon Pecan bar
  • 2 large eggs
  • ½ cup cottage cheese (or blended silken tofu for dairy-free)
  • ¼ cup oat flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • Pinch of sea salt
  • Grass-fed butter or coconut oil for the pan
  • Toppings: maple syrup, fresh fruit, dollop of Greek yogurt

Method

    Blend bar, eggs, cottage cheese, and vanilla in a blender until completely smooth, about 45 seconds.

    Add oat flour, baking powder, cinnamon, and salt; pulse just until combined — do not over-mix or pancakes will be tough.

    Heat a non-stick skillet over medium heat and grease with butter or coconut oil.

    Pour ¼ cup batter per pancake. Cook until bubbles form on the surface and edges look set, about 2–3 minutes.

    Flip and cook 1–2 minutes more until golden.

    Serve stacked with maple syrup, fruit, and a spoonful of Greek yogurt.
