Bison Bar Granola Crumble

A pantry-staple granola using crumbled Genesee bar as the protein base baked with oats, seeds, and coconut oil. Goes over Greek yogurt, kefir, or straight from the jar.

Ingredients

  • 2 Genesee bars, roughly crumbled
  • 2 cups rolled oats
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • ¼ cup unsweetened coconut flakes
  • 3 tbsp coconut oil, melted
  • 2 tbsp maple syrup or raw honey
  • 1 tsp cinnamon
  • ½ tsp sea salt

Method

    Preheat oven to 325°F. Line a large baking sheet with parchment paper.

    In a large bowl, combine oats, pumpkin seeds, sunflower seeds, coconut flakes, cinnamon, and salt.

    Pour coconut oil and maple syrup over dry ingredients and toss until evenly coated.

    Spread mixture in a single even layer on the baking sheet.

    Bake for 20 minutes, stirring once at the 10-minute mark.

    Remove from oven and scatter crumbled bar pieces evenly over the hot granola.

    Press down gently with a spatula if you want clusters to form, then cool completely without disturbing — about 30 minutes.

    Store in an airtight jar at room temperature for up to 10 days.
