Bison Bar Chocolate Protein Bark

A dark chocolate bark with crumbled Genesee bar pressed in before it sets. Makes 16 squares that store in the freezer for a month — the most efficient meal-prep dessert in the kitchen.

Ingredients

  • 2 Genesee bars (any flavor), roughly crumbled
  • 200g dark chocolate (70%+), chopped
  • 2 tbsp coconut oil
  • ½ cup mixed toppings: pumpkin seeds, dried cranberries, toasted coconut, sea salt flakes

Method

    Line a 9×13 baking sheet with parchment paper.

    Melt chocolate and coconut oil together in a double boiler or microwave (30-second intervals, stirring between each).

    Pour melted chocolate onto the parchment and spread to roughly ¼-inch thickness.

    Immediately scatter crumbled bar pieces and toppings across the surface.

    Gently press toppings in so they adhere.

    Refrigerate for 1 hour until completely set.

    Break or cut into roughly 16 pieces and store in the fridge for 2 weeks or freezer for 1 month.
